Fruit Cake Cookies

Cookies stuffed with pecans, dates and tiny holiday-colored bits of fruit certainly bring the festivities up a notch or two. With a hint of caramel, these chewy bites bring back the ghost of Christmas past.

Ingredients

  • ½ cup butter
  • 1 cup brown sugar
  • 1 egg
  • ¼ cup buttermilk
  • 2 cups flour
  • ½ teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 1 cup pecans, chopped
  • 1 cup dates, chopped
  • 1 cup candied fruit or cherries

Directions

  1. Preheat oven to 350 degrees.

  2. Cream butter and brown sugar. Add in egg and milk; mix well. Then mix in flour, baking powder, soda and salt.

  3. Once incorporated, stir in nuts, dates and candied fruit.

  4. Chill for ½ hour.

  5. Use a tablespoon to drop small balls of dough onto a cookie sheet. Bake for about 15 minutes or until golden brown.
