Fruit Cake Cookies Originally published December 1970
Cookies stuffed with pecans, dates and tiny holiday-colored bits of fruit certainly bring the festivities up a notch or two. With a hint of caramel, these chewy bites bring back the ghost of Christmas past.
Ingredients
- ½ cup butter
- 1 cup brown sugar
- 1 egg
- ¼ cup buttermilk
- 2 cups flour
- ½ teaspoon baking powder
- ½ teaspoon baking soda
- ½ teaspoon salt
- 1 cup pecans, chopped
- 1 cup dates, chopped
- 1 cup candied fruit or cherries
Directions

Preheat oven to 350 degrees.

Cream butter and brown sugar. Add in egg and milk; mix well. Then mix in flour, baking powder, soda and salt.

Once incorporated, stir in nuts, dates and candied fruit.

Chill for ½ hour.

Use a tablespoon to drop small balls of dough onto a cookie sheet. Bake for about 15 minutes or until golden brown.
