Flossie Johnson’s Cornbread

Flossie Johnson, the former wife of NASCAR legend Junior Johnson, is famous for her cooking and authoring three cookbooks. She’s also a big fan of cornmeal from Linney’s Water Mill. Read more about Linney's Mill in Stone-Ground Goodness.

Ingredients

  • 1 cup of all-purpose flour
  • 2 tablespoons sugar
  • 1 teaspoon of salt
  • 1 cup of milk
  • 1 cup of cornmeal
  • 4 teaspoons of baking powder
  • ¼ cup of oil
  • 1 egg

Directions

  1. Preheat oven to 425 degrees. 

  2. Grease 10-inch cast iron skillet with shortening. Mix all ingredients together and pour into skillet. Bake for 20 to 25 minutes.
