1 pound (16 ounces) sharp cheddar cheese, freshly grated*
1 tablespoon apple cider vinegar
3 tablespoons diced pimentos
½ cup dried cranberries, roughly chopped
1 cup mayonnaise
1 tablespoon sugar
Salt and pepper to taste
Thoroughly mix all ingredients.
Refrigerate overnight to let flavors meld.
* Note: You can use a food processor to quickly "grate" your cheese — just chop into 1-inch cubes and lightly pulse until crumbled. For best results, avoid shredded cheese or pre-cut cubed cheese.
